  • 2 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

Method
 

  1. Pat your chicken thighs dry with paper towels and season generously with salt and pepper on both sides. This step ensures proper browning and prevents steam from building up during the sear.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering, then add chicken thighs skin-side down. Sear for 5-6 minutes without moving them, letting the skin become golden and crispy.
  3. Flip the chicken thighs and cook the other side for 3-4 minutes until lightly golden. The skin-side will render fat that keeps the meat incredibly moist throughout cooking.
