Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup heavy whipping cream
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 2 tablespoons lemon juice

Method
 

  1. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Mix until it resembles wet sand and press firmly into the bottom of a 9-inch springform pan. I like to use the bottom of a measuring cup to get an even, compact layer.
  2. Beat softened cream cheese on medium speed for 2 minutes until it's completely smooth. Scrape down the sides halfway through so you don't miss any lumps hiding in there. This step matters more than you'd think.
  3. Add powdered sugar and vanilla extract, then beat for another 1 minute until fluffy. Don't overbeat or you'll incorporate too much air and your cheesecake gets weird and foamy. I stop as soon as I don't see any sugar streaks anymore.
  4. Whip the heavy cream in a separate bowl on high speed until stiff peaks form. This takes about 2 to 3 minutes depending on your mixer. Fold the whipped cream gently into the cream cheese mixture using a spatula until mostly combined—don't overmix.
  5. Spread half the filling over the crust, creating an even layer. Toss your berries with the lemon juice and scatter half of them across this layer.
  6. Top with the remaining filling, smoothing the surface with a spatula. Arrange the remaining berries on top in your patriotic no bake cheesecake pattern—reds, whites, and blues grouped together looks amazing.
  7. Chill for at least 4 hours or overnight until set. The longer it sits, the better the flavors meld together and the slices hold their shape beautifully.
