  1. Preheat your oven to 400°F and line a large baking sheet with foil. Pat your chicken wings completely dry with paper towels—this step gets them crispy instead of steamed. I learned this the hard way after my first batch came out rubbery.
  2. Toss the wings with olive oil, salt, and pepper in a large bowl. Spread them out in a single layer on your prepared baking sheet. Make sure they're not crowded or they'll steam instead of roast.
  3. Bake for 25 minutes at 400°F without any sauce yet. You want them to start getting golden and render some fat. When I skip this step and add sauce right away, the wings don't get crispy—trust me on this.
  4. While the wings cook, whisk together ketchup, brown sugar, apple cider vinegar, garlic powder, onion powder, and smoked paprika in a small bowl. Stir until the brown sugar dissolves completely. The mixture should look smooth and glossy, not gritty.
  5. Pull the wings out after 25 minutes and brush generously with your sauce. Return them to the oven for 15-20 minutes, stirring halfway through. The sauce will bubble and caramelize—watch for that golden-brown color on the edges.
  6. Toss the finished sticky BBQ chicken wings party with any remaining sauce in a serving bowl. Let them rest for 2 minutes before serving so the glaze sets up a little bit. This prevents your guests' fingers from getting too sticky (okay, mostly too sticky).
