Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1/2 cup honey
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp chopped fresh cilantro

Method

  1. Pat the chicken thighs completely dry with paper towels—this matters because moisture on the surface keeps them from browning properly. Heat the olive oil in a large skillet over medium-high heat for exactly one minute before the chicken hits the pan.
  2. Sear the chicken thighs 4-5 minutes per side until the outside catches some golden-brown color. I skip this step maybe twice a year, and the finished dish never tastes as good, so I always come back to it.
  3. In a small bowl, whisk together the honey, minced garlic, ginger, soy sauce, lemon juice, black pepper, salt, and chicken broth. The reason you combine these now is so the garlic distributes evenly instead of clumping up in the slow cooker.
  4. Place the seared chicken into your slow cooker and pour the entire sauce mixture over the top. Set the slow cooker to low and cook for exactly 4 hours—this timing keeps the chicken tender without overcooking it into shreds.
  5. After 4 hours, carefully remove the chicken to a serving platter and tent loosely with foil. Your slow cooker honey garlic chicken BBQ should be piping hot and smell incredible by now.
  6. Turn the slow cooker setting to high and stir in the cornstarch mixture one tablespoon at a time until the sauce thickens to your preferred consistency. This takes about 8-10 minutes—I usually check after 7 minutes because thickness builds quickly.
  7. Return the chicken to the thickened sauce, sprinkle the fresh cilantro over everything, and let it rest 5 minutes before serving. This resting step matters because it lets the flavors settle and the sauce redistribute.
