Ingredients

  • 3 ripe avocados, halved and pitted
  • 2 tbsp fresh lime juice
  • 1/4 cup finely diced red onion
  • 2 tbsp chopped cilantro
  • 1 small jalapeño, seeded and minced
  • 1/2 tsp kosher salt
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup diced tomato
  • 1/4 cup corn kernels
  • 1 tbsp extra-virgin olive oil
  • 1 clove garlic, minced

Method

  1. Scoop the avocado flesh into a medium bowl using a spoon. Cut each half in half lengthwise, then scoop out the flesh in one smooth motion—don't mash yet because you want texture.
  2. Squeeze fresh lime juice over the avocado pieces immediately. Toss gently to coat everything, which prevents browning and starts building that bright flavor your guests will love.
  3. Fold in the diced red onion, minced garlic, and jalapeño using a fork. I use gentle folding motions instead of aggressive stirring because you want some chunks visible—that's what makes this patriotic guacamole sharing feel fancy instead of like baby food.
  4. Add the kosher salt and cilantro, then fold once more. My rule: stop folding the second it starts coming together. Nobody wants baby-smooth guac.
  5. Transfer to a serving bowl and drizzle the extra-virgin olive oil on top. This adds richness and keeps the surface from browning during the party.
  6. Top with the diced tomato, shredded cheddar, and corn kernels in separate sections. I arrange them in stripes to make the red, white, and blue pop visually—it's such an easy way to make people go "wow" before they even taste it.
  7. Serve immediately with your favorite chips or veggie sticks. Don't refrigerate it beforehand because cold guac tastes kinda flat compared to room temperature, which sounds weird but trust me on this.
