Ingredients

  • 3 lb chicken wings
  • 1 cup all purpose flour
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 eggs
  • 1/4 cup milk
  • 2 cups vegetable oil
  • 1/2 cup buffalo sauce
  • 4 tbsp butter
  • 2 tbsp hot sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ranch seasoning

Method

  1. Prepare your chicken wings by patting them thoroughly dry with paper towels. Separate the flats from the drums and discard the tips—this ensures even cooking and better texture for your crispy game day football wings.
  2. Mix flour with paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt in a shallow bowl. Whisk eggs with milk in another bowl to create your egg wash for the dredging station.
  3. Dip each wing into the egg wash, then coat thoroughly in the seasoned flour mixture. Double-coat by dipping again briefly in egg wash and flour for maximum crispiness in these tailgate wings.
  4. Heat vegetable oil to 350–375°F in a heavy-bottomed pot or deep skillet. Fry wings in batches for 16–20 minutes until golden brown and internal temperature reaches 165°F—don't overcrowd the pan or temperature will drop.
  5. While wings cook, melt butter in a small saucepan over medium heat. Stir in buffalo sauce, hot sauce, Worcestershire sauce, and ranch seasoning until completely combined and fragrant.
  6. Transfer cooked wings to a paper towel-lined plate to drain excess oil. Toss hot wings with the buffalo butter sauce in a large mixing bowl until evenly coated.
  7. Arrange sauce-coated football party wings on a serving platter and serve immediately with celery sticks and blue cheese dip for maximum enjoyment.
