Ingredients

  • 3 lb chicken wings
  • 2 tbsp baking powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup BBQ sauce
  • 2 tbsp butter
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro
  • 2 tbsp sesame seeds

Method

  1. Preheat your oven to 250°F and line two large baking sheets with aluminum foil, then place wire racks on top. Pat your chicken wings completely dry with paper towels—moisture is the enemy of crispiness, so don't skip this essential step.
  2. Combine baking powder, garlic powder, paprika, cayenne pepper, salt, and black pepper in a small bowl, whisking thoroughly to break up any lumps. The dry rub mixture should be uniform in color with no visible clumps that could create bitter spots during cooking.
  3. Toss the wings with the dry rub mixture until every piece is evenly coated, then arrange them on your prepared racks in a single layer. Increase oven temperature to 425°F and bake for 30-35 minutes until wings are deeply golden and crispy game day BBQ wings recipe standards are met.
  4. While the wings cook, prepare the honey-butter glaze by melting butter in a small saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant, then stir in BBQ sauce, honey, apple cider vinegar, and Worcestershire sauce.
  5. Remove wings from oven and let rest for 2 minutes before tossing them in the warm glaze until fully coated. Sprinkle with fresh cilantro and sesame seeds, then transfer to a serving platter and watch them disappear during kickoff.
